Sour Cream Potatoes

Ingredients

  • 12 medium red potatoes
  • 1/2 cup butter
  • 3 tbl minced parsley
  • 1 cup sour cream
  • 3 slices of ham, cooked and sliced
  • salt & pepper to flavor

Cook, cool, peel and dice the potatoes. Melt 1/4 cup butter in skillet and add potatoes. Season with salt, pepper and parsley. Add sour cream and remaining butter and ham, stirring carefully.
